Guest guest Posted May 17, 2002 Report Share Posted May 17, 2002 Kuzu If you live in the south you may know kuzu (pronounced kudzu) as an invasive vine that grows over trees and everything in its path. What you might not know is that a starch can be made from the root of kuzu and used in puddings and other desserts as a thickener and to add a creamy texture much like eggs do. Kuzu is soothing to digestive and circulatory systems and may reduce craving for alcohol. Dissolve kuzu in cool water before cooking. Bring to a boil and cook for 1-2 minutes to stabilize the starch. The mixture should thicken and become clear.
