Elaine Gotts**** (I can't ever remember and I lent the book to my cousin who has IBS and Crohn's Disease) wrote a book a couple of decades ago which put together the previous research on Celiac's Disease prior to the development of laproscopic biopsy. Much of the research prior to this time identified Celiac's as a generalized intolerance to most carbohydrates but especially to those which were grain based including corn, wheat, rye, oats all legumes and even grass seeds like buckwheat. People who currently use this diet report great improvement BUT they must be incredibly stricted with themselves. I was on their forum for awhile and had email conversations with Elaine but I found most of the members to be incredibly rude about people who chose to infringe the strict guidelines of the diet and so I removed myself. There is also a webpage with recipes and some of them are great - based on nut flours. The real drawback was in the stressing of fats from dairy products and in the use of saccharine to replace sugars. The theory behind the SCD diet seems sound, just put into disrepute by those who favour the description of Celiac's as an intolerance to wheat-based gluten. I am really tired tonight and feeling slightly off because of some emotional issues here, but if this isn't enough info I will do what i can tomorrow to share further. Are you saying that all legumes would need to be avoided also? That's why the use of nut flours? This is very restricted! Sometimes, no matter how well my dh keeps on program, he still has problems. It looks like Celiac may go deeper than the general medical profession chooses to admit. Thanks for the information about this book. . .I'll see if the library has it available.
