Best Cornbread

 

2 cups soaked soybeans

2 cups water

2 Tbsp. liquid sweetener

1/4 cup raw quinoa flakes

1/4 - 1/2 cup almonds or cashews (optional)

2 tsp. salt

2 cups cornmeal

 

Blend the first 6 ingredients until smooth. Pour into cornmeal. Mix well.

Fill preheated, floured muffin cups. Bake in preheated oven at 400 degrees F.

for 35 - 40 minutes. For loaf, bake 1 to 1 1/2 hours.

 

Note: There is an enzyme in many soybeans which is relased on crushing the

bean. It is this enzyme that imparts a " beany " flavor. But the flavor develops

only if the enzyme is allowed to work on the bean pulp. Heat destorys the

enzyme. Therefore itis well to preheat the oven and work rapidly to prevent

prolonged action of the enzyme after blending the beans.
