Guest guest Posted May 14, 2002 Report Share Posted May 14, 2002 Best Cornbread 2 cups soaked soybeans 2 cups water 2 Tbsp. liquid sweetener 1/4 cup raw quinoa flakes 1/4 - 1/2 cup almonds or cashews (optional) 2 tsp. salt 2 cups cornmeal Blend the first 6 ingredients until smooth. Pour into cornmeal. Mix well. Fill preheated, floured muffin cups. Bake in preheated oven at 400 degrees F. for 35 - 40 minutes. For loaf, bake 1 to 1 1/2 hours. Note: There is an enzyme in many soybeans which is relased on crushing the bean. It is this enzyme that imparts a " beany " flavor. But the flavor develops only if the enzyme is allowed to work on the bean pulp. Heat destorys the enzyme.
