Guest guest Posted May 5, 2002 Report Share Posted May 5, 2002 Hi everyone, I've been experimenting with bean dips again, and this is what I came up with yesterday: White Bean Dip/Spread 1 15-oz can white beans (I used cannelini, but I think great northern would work fine) roasted red peppers (amount to your taste) 2 to 3 tablespoons pinenuts 1 tablespoon balsamic vinegar 1 clove minced garlic artichoke hearts (amount to your taste) Place all ingredients in a food processor, and blend to desired consistency. Chop the artichoke hearts, and add to the bean mixture. *Serve with crackers, bread, raw or lightly steamed veggies. Something I like to do with my bean dips, also, is to thin them out with water to a sauce consistency, and serve over steamed veggies and brown rice. Yum!
