The page linked below specifically discusses celiac disease, and provides a completely accurate and reliable list of grains that are safe to eat. The page also discusses the continuing controversy over whether or not it is safe for celiacs to eat oats. http://www.niddk.nih.gov/health/digest/pubs/celiac/ I found this page by going to http://google.com and entering a search string of +celiac +millet There were a number of other interesting looking hits returned.
