We love humus in our house. Here's a unique recipe that includes the benefits of

soy in the form of some tofu. The flavors will come from the garlic, lemon juice

and olive oil.

 

Roasted Garlic Humus

 

1 whole head garlic

1 15-ounce garbanzo (chickpeas) beans, drained

1/4 pound firm tofu, drained

2 tablespoons fresh lemon juice

1 tablespoon olive oil

1/2 teaspoon ground cumin

1/4 teaspoon salt

1 tablespoon minced fresh cilantro

 

Preheat oven to 350-degrees. Remove white skin from garlic head. Do not peal or

separate the cloves. Wrap garlic heat in foil, and bake at 350-degrees for 1

hour. Remove from oven and cool. Separate cloves, and squeeze garlic pulp into

food processor. Discard skins.

 

Add garbanzos, tofu, lemon juice, olive oil, cumin, and salt to the garlic pulp.

Process until smooth. Transfer mixture to a bowl, and sprinkle cilantro on top.

Serve with tortilla chips or pita wedges.
