They turned out great..even my husband who is not GF liked them. source: The complete Guide to Wheat-Free Cooking By: Phyllis Potts yeild: about 4 dozen made vegan by me :-) Chewy Chocolate Cookies 1 1/4 Cups Shortening 2 cups granulated sugar 2 eggs replaced ( we used energy egg replacer) 2 tsp. vanilla extract 1 cup bean flour 1 cup rice flour 2 tsp.xanthan gum 3.4 cup cocoa 1tsp. baking soda 1/2 tsp. salt 1 cup chopped nuts ( we used almonds) PREHEAT oven to 350 degrees. CREAM shortening and sugar. ADD eggs and vanilla and BLEND. COMBINE in another bowl flours, xanthan gum, cocoa, baking soda, and salt. BLEND into shortening mixture STIR in nuts DROP by teaspoonfuls onto ungreased cookie sheet(s) BAKE at 350 for 8 to 9 minutes. DO not over bake.
