My name is Amy and I help Co-moderate this group. First, Christine. My son has celiac, and he is only 6. I am sure that the soy sauce in the falafel could have caused some irritation. That is very possible. If a company does not list the ingredients of the soy sauce they use, I would stay away from it. Soy sauce 98% of the time does contain wheat. My son has been suffering from tummy problems for the last 4 weeks. We do not get our health insurance until May. So I am waiting to get him into the Dr. I do not think he is getting any hidden gluten, but one can never be to sure. It is very possible to be VEGAN and GLUTEN FREE. We do it here with grand success. My son has Celiac, and my Daughter has sever allergies. So we eat a very restricted diet, and both my children and my husband and myself are doing grand. Infact, my Daughter broke her elbow/arm in October. She healed weeks faster then normal children. They took weekly x-rays and were just amazed at her healing rate. So I have no worries about being vegan/ gluten free. I hope that we can answer any questions that come up.. and if not, at least lend our support. Please feel free to post favorite recipes or restaurants or favorite products. The more information shared the better. We have just found out that a lot of shampoos have wheat germ and Modified food starch in them.. it has cause a lot of skin problems at our home. It is too bad we had to learn the hard way.
