Guest guest Posted April 10, 2002 Report Share Posted April 10, 2002 Source: New recipes from the Moose wood Restaurant serves: 4 Artichoke Heart and Tomato Salad Artichoke hearts are one of the few canned foods that we recommend and do use in our kitchen. Here they are combined with fresh, ripe tomatoes in a light marinade. 4 ripe, medium tomatos 8 canned artichoke hearts ( not marinated) _________ 1/2 cup vegetable oil 1/8 cup wine vinegar or white vinegar 1 garlic clove, pressed 1 TBS. fresh tarragon ( 1/4 tsp. dried) 1TBS fresh basil ( 1/4 tsp. dried) salt and black peper to taste Cut each tomato into 6 wedges and each artichoke heart into halves. Blend the rest of the ingredients, pour over the vegetables, and toss. Chill for at least 20 minutes. Serve on a bed of greens. Or fill a pita with artichoke and tomato salad, and greens.
