Greetings,

 

I found this recipe for GF pumpernickel bread on the Red Star Yeast site. I

baked some in my breadmaker last night, and it turned out pretty good. This

was my first attempt at GF baking, and I'm pleased with the results. It

doesn't taste like bread made from wheat, of course, but the texture is

better than other pre-made GF breads that I've recently tried, and it has a

good flavor. I only wrote down the breadmaker version, but if you need the

regular version, just go to the Red Star site; they also have several other

GF bread recipes that look good. Enjoy!

 

 

GF Pumpernickel Bread

(veganized by me)

 

Dry ingredients:

 

2 1/4 teaspoons yeast

2 cups brown rice flour

1/2 cup tapioca flour

1/2 cup potato starch flour

1 tablespoon xanthan gum

1 tablespoon caraway seeds

1 1/2 teaspoons salt

1/2 cup soy milk powder

1 tablespoon cocoa powder

3 tablespoons sugar

1 teaspoon grated orange peel

4 tablespoons NRG powdered egg replacer

 

 

Wet ingredients:

 

3 tablespoons molasses

1 teaspoon vinegar

2 cups water

3 tablespoons oil

 

 

 

Combine wet, room temperature ingredients together in a bowl , then pour into

the breadmaker baking pan. Thoroughly combine, using a whisk, all the dry

ingredients, then add to bread pan on top of wet ingredients. Use the

normal, or basic cycle; start the machine. After mixing begins, help any

unmixed ingredients into the dough with a rubber spatula. When cycle is

complete, remove pan from machine. Allow bread to remain in pan for about 10

minutes (I wouldn't recommend any longer than this, my bread was beginning to

get a little soggy on the bottom after 10 minutes). Then gently remove the

loaf, and cool on a wire rack before slicing.

 

 

PS: I tried a freshly sliced piece spread with some pumpkin butter, and it

was delicious! I have another recipe for Brown and White Bread, gotten from

the same site, which I haven't tried yet. I'll let you know how it turned

out when I do.
