I just have one more question: what does everyone think about oats? I've seen some reports saying that oats are OK for celiacs, and others say not. I know that rice, millet and quinoa are OK, which is good because I love all of those. I think buckwheat is OK as well, please correct me if I'm wrong. Christine, my dh avoids oats and I believe there is possibility of cross-contamination with them. Brenda Lee and Amy have had lots of experience with celiac diets (for much longer than I have) and maybe they would be willing to help us out here with this question. Buckwheat is fine. .. .I buy the 100% pure buckwheat flour and there is no gluten in it. Watch, tho, 'cause some places mixes it with wheat flour. Buckwheat is a member of the rhubarb family. Have you checked through the archives? There are some good recipes for crackers. . .quinoa crackers for one. I make them up in quantity and freeze them. Then when you need them. . .you have them ready to eat! Pizza crust. . .can be made easily gluten-free (from a mix or by hand). Also, do you like corn tortillas? They aren't quite the same as wheat ones, but in my town I can purchase them freshly made (still warm) from the grocers bakery section and they are very good. Do you have a vet here on the island that is okay with that? I haven't had a lot of luck finding one. Thanks and welcome to the list.
