Guest guest Posted March 19, 2002 Report Share Posted March 19, 2002 Slow Cooker Vegetable Minestrone Recipe By : Serving Size : 12 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 cups vegetable broth 4 cups tomato juice 1 tablespoon dried basil leaves 1 teaspoon salt 1/2 teaspoon dried oregano leaves 1/4 teaspoon pepper 2 medium carrots -- sliced (1 cup) 2 medium celery stalks -- chopped (1 cup) 1 medium onion -- chopped (1/2 cup) 1 cup sliced fresh mushrooms -- (3 ounces) 2 garlic cloves -- finely chopped 1 28 oz can diced tomatoes -- undrained 1 1/2 cups uncooked quinoa pasta -- (4 1/2 ounces) (vegan) Parmesan cheese -- if desired Mix all ingredients except pasta and vegan cheese in 4- to 5-quart slow cooker. Cover and cook on low heat setting 7 to 8 hours or until vegetables are tender. Stir in pasta. Cover and cook on high heat setting 15 to 20 minutes or until pasta is tender.
