Guest guest Posted March 15, 2002 Report Share Posted March 15, 2002 Carrot Pie Source: Lifestyle Menu Planner 1 1/2 cups soymilk 1 tsp. vanilla 3 Tbsp. oil 3/4 tsp. salt 1 1/2 Tbsp. cornstarch 3 Tbsp. soy flour or soy milk powder 3/4 cup pitted dates 1 3/4 cups cooked carrots Whiz all ingredients in blender until smooth. Pour into unbaked pie shell. Bake at 350° until set, about 35 minutes. Top with a whipped topping of choice, if desired.
