Apples Stuffed with Prune-Nut Filling

1 cup prunes

water -- to cover

1/4 cup chopped walnuts

1 tablespoon honey

1 tablespoon softened vegan margarine

1 teaspoon lemon juice

1/4 teaspoon cinnamon

3/8 teaspoon ginger

1/8 teaspoon ground cloves

6 large baking apples

1 1/2 cups water

1/3 cup honey (or alternative)

 

Cook prunes in water in covered pan for about 25 minutes.

 

Cool, drain, and pit prunes. Pour cooking juice into the bowl of a blender,

add prunes, and puree. Transfer to a mixing bowl and add walnuts, honey,

margarine, lemon juice, and spices.

 

Wash and core apples and place in an 8- or 9-inch round, flat-bottom

casserole.

 

Preheat oven to 300ºF.

 

Place about 2 tablespoons of the prune filling in cavity of each apple.

Combine water and honey and pour into pan around apples. Bake in preheated

oven for about 1 hour, or until apples are tender.

 

Serve with pan juice.

 

Yield: 6 servings.
