Guest guest Posted March 8, 2002 Report Share Posted March 8, 2002 Ratatouille Source: Fun with Natural Foods 1 large onion, cut into large pieces 1 clove garlic, minced 2 zucchini, sliced 1 medium sized eggplant, peeled and cubed 1 green pepper, cut into one-inch pieces 2 cups tomatoes, fresh or canned, peeled and quartered 1 tsp. dried sweet basil 1 tsp. salt or to taste Saute' vegetables in 2 Tbsp. olive oil in large oven proof casserole. Combine tomatoes and seasonings and bring to a boil. Combine with vegetables. Simmer until done. Serve with rice or lentils, and soy yogurt topped with chopped parsley and green onions.
