Guest guest Posted March 1, 2002 Report Share Posted March 1, 2002 Creamed Potatoes Source: Natural Lifestyle and Your Health (adapted) Precooked boiled potatoes 1 medium onion 1 cup almonds, blanched, optional 4 cups water 1 tsp. salt 1/4 cup potato flour Cook potatoes, cool and slice. Chop onion, saute in water slightly. Place in prepared baking dish in layers. Blend almonds, water, salt and potato flour until very smooth. Pour over potatoes and onions. Top with pimento cheese or bread crumbs. Bake at 350° F. until bubbly, 30 - 50 minutes. ***Soy milk makes a good substitute for water in this recipe.
