Guest guest Posted March 4, 2002 Report Share Posted March 4, 2002 Rocky Road Candy, Spa Style Source: Palms/Oaks Cookbook 2 Tbsp. honey, or alternative 1 Tbsp. peanut butter 2 Tbsp. carob powder 1 tsp. vanilla 4 rice cakes, unsalted and very crisp Combine all but rice cakes in a pan and cook and stir until melted. TO MICROWAVE: Combine in a 4 cup glass measuring cup or bowl and microwave one minute. Stir until smooth. If mixture is too thick, add a few drops of water. Break rice cakes into approximately one inch pieces in a non-stick large bowl. Use a rubber spatula to scoop the Carob Syrup into the bowl and onto the broken rice cakes. Use the same spatula with a fork to toss the mixture to partially coat the rice cakes. Press the Rocky Road Candy into a nonstick sprayed eight inch pan or plate and cool.
