Lentil flour is the main ingredient for small Indian breads called Pappadams; these crunchy and delicious breads can be found at Indo-Pak. Poi flour (taro) is extremely digestible and is excellent if there are multiple allergies or gastrointestinal problems. It is a good source of Vitamin B-1 and calcium. It can be made into hot cereal or used as a thickener for soups or puddings.
