Gingerly Fruited Rice Salad

Source: my friend Raizel

 

1 cup rice

1 cup orange juice

1 cup water

2 navel oranges, peeled and coarsely chopped

1 seedless grapes, cut in half

1 strawberries, quartered

 

Toast rice in oil for 2 to 3 minutes, add juice and water and cook covered on

low heat for 15 minutes. Chill thoroughly.

 

Dressing

1/3 cup oil

1/4 cup lemon juice

3 Tbs honey

1 tsp finely grated fresh ginger or ginger powder

 

Mix ingredients for dressing and pour over chilled salad.
