Guest guest Posted February 22, 2002 Report Share Posted February 22, 2002 Chickpea Salad Source: my friend Raizel 4 cups chickpeas (or 2 cans) 1 jar 3 1/2 oz stuffed green olives 1/2 cup black olives 1 diced red pepper 1 diced red onion 1 15-oz baby corn cut into thirds (or a can of corn or frozen corn) Combine the above ingredients in a bowl. In a separate bowl, mix the following: 1/4 oil 1/4 vinegar 1/2 tsp black pepper 1 tsp sugar (optional) 3/4 tsp salt 1 tsp Italian seasoning (optional) 1/2 tsp parsley Pour over salad and serve chilled.
