AN ALTERNATIVE TO COFFEE, TEA, AND MILK

 

My three daughters are off from school this week,

and I am the house dad. Today is day three. Wish

me luck. I have three more days to go.

 

On Monday night, Lizzy had three of her 12-year-old

classmates invade my castle for a sleepover. When my

girls have their friends spend the night, I usually

prepare dough for them at 5 AM so that they can enjoy

the pleasures of baking fresh bread when they roll

out of bed. They ate swans, bears, and rabbits, and

rolls of many sizes and shapes which they took, hot

out of the oven, and covered with homemade soy butter

and organic apricot and raspberry jelly.

 

I was surprised when one of the girls asked for

coffee. We have no coffee in my house, so I

offered them a soy treat. It was as good an excuse

as any to open up the 50 pound bag of organic soybeans

I just received. Everybody groaned at my offer. Kids

are usually not big fans of hot soy milk.

 

Hannah carefully measured the one-half cup of soybeans,

while Lizzy and Jenna went downstairs to my office water

cooler and drained two quarts of my finest H2O.

 

Twenty-five minutes later, the machine beeped, and the

soymilk was ready. I added one-third cup of maple syrup

to the two quarts of hot soymilk. I then added three

heaping tablespoons of my homemade chai mix.

The girls were in heaven, sipping their hot drinks and

generally creating a sticky trail of dripped jam and

breadcrumbs from my dining room table to Lizzy's

room.

 

They all enjoyed seconds. One girl had thirds.

I was content to find about one-half cup of the

original two quarts of chai left for me.

 

I added sugar and chocolate powder to the ground

soybeans (okara) which was left in the machine,

with a few tablesoons of chai milk, and made an

incredible pudding. An hour later, I checked

my refrigerator to see if the pudding had properly

set. There was no pudding in the fridge, but there

was an empty glass dish in the sink that had once

been filled with chocolate pudding.
