Guest guest Posted February 18, 2002 Report Share Posted February 18, 2002 Mashed Cow Bean Soup Source: Seasoned with Love, A Second Helping *This recipe originates in Zambesi, Africa. 1 cup cow beans 1 Tbsp. cooking oil 1 liter water 2 Tbsp. peanut butter 1/2 tsp. salt Fry the cow beans in oil until they turn brown. Grind or pound the beans into powder. Sieve the powder to remove large particles. Bring water to boil. Add the cow bean powder and cook for 30 minutes or until tender. More water may be added. Add peanut butter and salt to the boiling mixture and mix well. Serve sauce over rice or as a soup.
