Guest guest Posted February 13, 2002 Report Share Posted February 13, 2002 Caramel Apple Cake Source: Internet/newdiet.com (adapted) 5 cups thinly sliced apples, peeled 5 Tablespoons vegan margarine 3/4 cup brown sugar, date sugar, or Sucanat 1/4 cup apple juice 1 Tablespoon lemon juice 2 teaspoons apple pie spices In a large sauce pan, melt margarine and then add remaining ingredients. Cook uncovered over medium heat, stirring frequently, for approximately 20 minutes or until soft and translucent. Do not mash apples, but try to retain sliced shape. Allow apples to partially cool in saucepan before transferring to well greased 8 " square cake pan. Arrange apples evenly in pan and them press down firmly. Place covered cake in refrigerator for several hours prior to serving. Apples will form a cake-like texture when chilled. Serve with caramel sauce, if desired.
