Guest guest Posted February 13, 2002 Report Share Posted February 13, 2002 Potato Dumplings Source: Natural Lifestyle and Your Health 2 lbs. potatoes 1/4 cup cashew butter 2 Tbsp. water 1 1/2 tsp. salt 1 cup rice flour (approx.) Cook potatoes and mash so there are no lumps remaining. Beat in cashew butter, water, and salt. Beat or knead in rice flour until you have a stiff dough. Divide dough into 16 equal pieces. Roll into smooth, round balls. Drop balls gently into a large kettle of boiling salted water. Dumplings are done when they rise to the top of the kettle. Transfer dumplings to your favorite soup or stew. Serve prinkled with paprika or minced parsley. Makes 8 or more servings.
