Guest guest Posted February 9, 2002 Report Share Posted February 9, 2002 Pan Potatoes Source: Vegi-Mex 2 Tbsp. vegan margarine 1 medium onion, chopped 1 green bell pepper, chopped 4 potatoes, peeled and diced 1/2 tsp. garlic salt 1/4 tsp. oregano, ground 1/4 tsp. chili powder In a large grying pan or skillet, saute onions and bell pepper in vegan margarine (or olive oil). When onions and pepper are tender, add diced potatoes and seasonings. Cover and cook over medium heat, stirring occasionally. When potatoes have softened, uncover and fry to desired crispness. Serve with plenty of salsa. Serves: 6 - 8.
