Guest guest Posted February 7, 2002 Report Share Posted February 7, 2002 Pico de Gallo Source: Vegi-Mex Spanish for " rooster's beak, " pico de gallo (PEE-koh day GI-yoh) is a relish made of finely chopped ingredients. This condiment was so named because it was once purportedly eaten with the thumb and finger, an action that resembles a rooster's pecking beak. 3 large tomatoes 4 jalapenos 1 large onion 1 large green bell pepper 2 cloves garlic 1 bunch fresh cilantro 1/2 Tbsp. salt 1/4 cup cold water 2 Tbsp. vinegar (or lemon juice) 1 lime One a cutting board, finely chop tomatoes, jalapenos, onion, bell pepper, garlic and cilantro. Place all in glass bowl and mix together. Add salt, water, and vinegar (lemon juice). Squeeze the juice from the lime into the mixture and mix thoroughly. Chill before serving.
