Guest guest Posted February 3, 2002 Report Share Posted February 3, 2002 Calabacitas Source: Savory Southwest (adapted) Calabacitas means " little squash " in Spanish, and this tasty dish has become more well-known since a popular restaurant, Norman's Fina Cocina, includes it on the menu. Add a diced tomato or a tablespoon of pimento to give this dish an extra dab of color or flavor. 1 Tbsp. olive oil 4 medium zucchini squash, cubed (about 4 cups) 1 medium onion, chopped 1 fresh jalapeno pepper, seeded and diced 1/2 clove garlic, chopped 1/2 tsp. salt 1 can (10 oz.) corn 1/2 cup vegan cheese, grated Place oil in medium saucepan or skillet. Saute squash with onion, jalapeno pepper and garlic. Add salt and corn; cook over medium heat 10 minutes. Sprinkle cheese over top; lower heat, and cover 2 - 4 minutes, until cheese melts. Makes 6 - 8 servings. ***Instead of a commercial, vegan cheese a " melty type " homemade vegan cheese would work well in this recipe.
