Make Your Own Curry Spice

Makes 1/4 cup

 

1 tbsp coriander seeds

1 tsp cumin seeds

1/2 tbsp turmeric (powder)

1/2 tsp ginger (powder)

2-4 dried red chilies (depending on desired hotness)

 

The key to curry is in the toasting. That's what really brings out the flavor.

In a heavy skillet, toast all the spices until they change to a darker shade

(about five minutes) and then put them in a coffee grinder until you have a fine

powder. Always keep your spices in an airtight container out of direct sunlight.

Write the date on the lid, because time passes quick and old spices start to

loose their kick!
