Sometimes it seems like I make the same old stuff! I don't know what you have on hand, but if I were preparing for a potluck dinner I'd take: *potato salad made with potatoes, pickles, seasonings, Vegenaise, and tofu (for the eggs) *quinoa patties with cashew gravy (gravy recipe in archives; quinoa patties are like the oatmeal patties I used to make but now I use quinoa instead --- and the family likes them even better). *pasta salad made from quinoa pasta *eggless egg salad: simple but delicious! Ingredients are extra- firm tofu, Vegenaise, Bill's Best Chicknish, and olives. YUM! *a vegetable (like green beans, peas, corn. . .at potlucks it seems like everyone brings " fancy " food and the regular veggies are left out). *a tossed salad or coleslaw salad *fruit salad What other ideas do ya'll have?
