Guest guest Posted January 8, 2002 Report Share Posted January 8, 2002 Mediterranean Style Vegetables Recipe from Better Homes and Garden (adapted) 2 cups zucchini sliced 2 cups red, yellow, or green sweet peppers sliced 2 cups broccoli flowerets 1/4 cup chicken-style broth 2 garlic, cloves minced 1 tablespoon basil or oregano snipped fresh or 1 teaspoon dried basil or oregano, crushed 1/4 teaspoon pepper 3 tomatoes, medium chopped In a Dutch oven or large kettle combine zucchini, sweet peppers, broccoli, chicken broth, garlic, basil or oregano, and pepper. Bring to boiling; reduce heat. Simmer, covered, for 6 to 8 minutes or till crisp-tender, stirring occasionally. Stir in tomatoes. Serve these flavorful stewed vegetables hot or at room temperature.
