As for the soy puddings, yes I have some nice recipes that make yummy ones. Unfortunately soy does not seem to agree with my digestive system :-( Which is a bummer because it is so healthy and so versatile! I've tried it in all forms (soy milk, tofu, miso, etc.) and if I eat more than just a little I have problems. Beano, which had been recommended to me for this, didn't help at all. As for the archives, I will search for the millet recipes there. The only quinoa flour I've been able to find to try so far had a very bitter taste (yeech) although many food allergy cookbooks rave about it.
