White Beans with Sun-dried Tomatoes

 

1-1/2 cups sun-dried tomatoes (not oil packed)

1 Tablespoon Olive oil

1 large yellow onion, diced

3-4 cloves garlic, minced

3 15-ounce cans cannellini beans (or other white beans), rinsed and drained

1/4 cup water

1/2 teaspoon ground sage

1/2 teaspoon salt

1/3 cup fresh basil, chopped

 

In small bowl, soak tomatoes in enough warm water to cover, until tomatoes are

soft (about one hour). Drain and coarsely chop.

 

In saucepan, heat oil over medium high heat. Add onion and garlic, cook,

stirring, until onion is soft and translucent. Add beans, tomatoes, water, sage,

salt. Cook for 10 to 15 minutes. Stir in basil, remove from heat. Keep warm

until ready to serve.

 

Serves 6.
