buffet!

 

New Potato Salad with Olives and Capers

 

1 pound new potatoes

1/4 cup fresh lemon juice

1/4 cup extra-virgin olive oil

salt to taste

20-30 pitted black or green olives, chopped

2 tablespoons capers, rinsed and squeezed

6 to 8 scallions, thinly sliced

 

Boil potatoes in salted water until tender. Cut in half if small, or or quarters

if large.

 

Coat potatoes with lemon juice, olive oil and salt. Mix in olives, capers, and

scallions. Serve warm, or well chilled. Serves 6.
