Guest guest Posted December 21, 2001 Report Share Posted December 21, 2001 Janice's Tapioca Pudding Source: Country Kitchen Collection 3/4 cup quick cooking tapioca 3 cups water 1/8 - 1/4 cup sugar 1 1/2 Tbsp. vanilla 1/2 - 3/4 cup cashews 3 cups water 1/4 cup tofu or soy milk powder 1 cup coconut, optional 1/2 cup raisins, optional COok first two ingredients in mocrowave, cooking three minutes at a time and stirring. Cook until clear. Takes approximately 15 minutes. While the tapioca is cooking, blend sugar, vanilla, cashews, soy/tofu milk powder with 1 cup water. Add remaining water. Bring to a boil and add cooked tapioca and raisins. Chill and serve. Other options: Sliced bananas, pears, peaches, or any drained fruit stirred in just prior to serving.
