Guest guest Posted December 21, 2001 Report Share Posted December 21, 2001 Minute Tapioca Source: Country Kitchen Collection 2/3 cup cashews or blanched almonds 3 cups water 1/4 cup honey, brown sugar or date sugar 1/8 tsp. salt 1/4 cup Minute tapioca 1 tsp. vanilla 1 tsp. maple flavoring Blend smooth nuts, honey (or sweetener) and salt with 1 cup water. Add rest of water. Add tapioca and let stand five minutes. Cook over medium heat, stirring constantly until mixture comes to full boil. Pudding will thicken as it cools. Remove from heat.
