I found the group while looking for the ingredients in worcestershire sauce. I found the ingredients at http://www.lea-perrins.com/ but I still don't know if the vinegar in it is gluten/wheat-free. What proportions do you use for this recipe for substitute soy sauce? The book did not say. I will be experimenting the first time I make it. I will use fresh or frozen ginger-root. I won't be using the dried powder....but, perhaps someone can try it with the powder and let us know how it turns out. I do alot of my cooking by " taste " , so I will try to keep record of the proportions I use, so I can pass on the results to those interested.
