BROWN RICE FLOUR CRUST

Source: Mother Nature's Garden Cookbook

 

2/3 c. brown rice flour

1/2 tsp. baking powder

1 tsp. ground cinnamon

3 T. frozen and thawed apple juice concentrate

1 T. water

1 T. oil (I omitted this)

 

In a medium bowl, mix together the rice flour, baking powder, and cinnamon.

In a small bowl, mix together the apple juice, water, and oil. Stir the juice

mixture into the dry ingredients. Mix until the dough is blended.

Press the dough in the bottom and up the sides of a 10-inch deep-dish pie

plate. The dough will be sparse, and it may not completely cover the bottom

of the dish. Bake the crust for 12 to 15 minutes, or as directed in the

recipe.
