Fifthe Ave. Carob Cream Pie

Source: friend took notes at a health seminar

 

 

Blend Until very smooth:

1 c. water

1/2c. cashews

1 tsp vanilla

1/2tsp. salt

 

Add and continue to blend:

1 c. pitted dates softened in 1 cup water(and broth)

3TBS. cornstarch

3TBS. carob powder

 

Pour Liquid into sauce pan and thicken, stirring constantly. Pour

thickened mixture into baked granola crust ( although I think LaDonnas

recipe would work great here)

Chil at least several hours.

 

 

Granola Crunch Pie Crust

1 1/2 c. granola

2 TBS. oil

 

Grind Granola into a blender. Put granola in a bowl add oil and some

water mix with a fork. add more water if nessary. Press into 9 inch

pie plate with fingers. Bake at 350 degrees for 10-15 mins

This sounds DELICIOUS, Amy. Is your gf granola recipe in our archives already?

PS: Just saw your note about pie crust. Yes, I think my oil pie crust recipe

would work great here also. :)

Yes, LaDonna,

 

Use the granola made with the quinoa grain. Also makes sure you heat this till

it is really thick... My daughter

heated it until it was thick like pudding, but it did not set well ... she was

really disappointed.
