Guest guest Posted November 14, 2001 Report Share Posted November 14, 2001 Bean Thread Salad " Yam Woon Sen " ~ Thailand Previously posted by Rose ~ 8 oz pkg Transparent bean thread (oriental noodles) 1 c. onions, finely sliced 2 med Tomatoes, cut in wedges 1 med Cucumber, peeled & cubed 1/4c Soy Curls (optional) 1/4c. Water 1 tsp Beef-style seasoning (read ingredients and substitute if necessary) 3 T Lemon juice 1 T. Bragg Liquid Aminos 2 t. honey or alternative sweetener 1/2 t Garlic puree 1/2 t Lime juice 1/3 c. Green onion, diced 1/4 c. Chinese parsley (cilantro) 1/2 c. Roasted crushed peanuts Bring 1 1/2 quarts water to a boil. Remove from heat and add noodles. Soak 10 min. or until soft. Drain well. Cut into 6 in. lengths. Slice onion into rings and then cut rings in half. Prepare tomatoes and cucumber and set aside. Dehydrate TVP in water with beef-style seasoning. Combine juice, liquid aminos, honey, garlic puree, and lime juice to make an " oriental dressing, " then set aside. Place noodles on a large platter over a bed of leafy lettuce. Arrange onion, tomatoes,cucumber, and softened TVP evenly over noodles. Pour dressing over mixture. Toss lightly. Garnish with a topping of green onions, parsley, and peanuts.
