I tried this recipe over the week-end and it turned out really well.

Although I made the crackers for my dh, I think I ate most of them! I

sprinkled sesame seeds over the top for added calcium and garnish. YUM!

I'll be making these again! :) LaDonna

 

Coconut Crackers

 

1 3/4 cups water

1/4 cup clean, raw cashews

1 1/2 Tbsp. sesame seeds

1 Tbsp. shredded coconut (unsweetened, raw)

3/4 cup cornmeal

3/4 cup rolled quinoa flakes

 

Process cashews with about 3/4 cup of the water in a blender until very

smooth. Add sesame seeds and coconut and continue blending. Add remaining

water and other ingredients and blend again until smooth. Pour onto a

sprayed cookie sheet and bake at 350° F for 20 minutes. Remove from oven

and score to desired cracker size. Return to oven adn bake an additional 40

minutes, or unti very lightly browned. Check frequently to prevent burning.

 

Yields: 4 dozen 1 3/4 " crackers.

Fat grams per 4 crackers: 2.6 g. (32%)
