After much experimenting I discovered a pie crust recipe that is gluten-free and has nearly the same texture/feel as my wheat pie crust did. I made my own blend of flour (tapicoa, potato, brown rice, and Bob's Red Mill flour blend. . .equal portions of each). I added Xanthan gum (tiny amount) and then used my regular oil and boiling water recipe. It worked great and my dh gave it an A+! I'm working on acceptable Thankgiving foods. . .and think I can make this even for guests who can have gluten. Just had to share my excitement! I'm still new at this gluten-free cooking stuff and this will be our first gluten-free holiday season.
