Guest guest Posted November 5, 2001 Report Share Posted November 5, 2001 Coconut Crackers 1 3/4 cups water 1/4 cup clean, raw cashews 1 1/2 Tbsp. sesame seeds 1 Tbsp. shredded coconut 3/4 cup cornmeal 3/4 cup rolled quinoa flakes Process cashews with about 3/4 cup of the water in a blender until very smooth. Add sesame seeds and coconut and continue blending. Add remaining water and other ingredients and blend again until smooth. Pour onto a sprayed cookie sheet and bake at 350° F for 20 minutes. Remove from oven and score to desired cracker size. Return to oven adn bake an additional 40 minutes, or unti very lightly browned. Check frequently to prevent burning. Yields: 4 dozen 1 3/4 " crackers. Calories per 4 crackers: 71 Fat grams per 4 crackers: 2.6 g.
