Guest guest Posted November 5, 2001 Report Share Posted November 5, 2001 Fruitful Rice Pudding Source: NEWSTART Lifestyle Cookbook 2 cups cooked brown rice 1 cup unsweetened, crushed pineapple 1/4 cup raisins 3/4 cup hot water 1/2 cup clean, raw cashews (scant) 1 ripe banana, medium 3 Tbsp. orange juice concentrate 1 tsp. vanilla 1/2 tsp. almond extract Mix first 3 ingredients in an 8 " x 8 " casserole dish. Process remaining ingredients in a blender until smooth and pour over rice and fruit. Bake at 350° F for 45 minutes and serve hot. May be made ahead by baking for 30 minutes and reheating just before serving. Garnish with peach or banana slices, if desired.
