Meal-in-One-Breakfast

Source: NEWSTART Lifestyle Cookbook

 

2 cups cooked brown rice

1 cup unsweetened, crushed pineapple

1/2 cup chopped dates or whole raisins

1/4 cup chopped walnuts

 

Combine all ingredients and serve warm or cold. For variation, substitute 1 - 2

ripe bananas and 1/2 cup strawberries, blended together, for pineapple.

 

Yields: 3 1/2 servings.

 

Calories per cup: 256

Fat grams: 5.6 (19%)
