Guest guest Posted November 5, 2001 Report Share Posted November 5, 2001 Indian Cornmeal Source: NEWSTART Lifestyle Cookbook 1 quart cold water 1 cup coarse cornmeal 1/4 cup raisins 1 tsp. salt 1 tsp. vanilla 1/4 tsp. coriander or anise (optional) Stir cornmeal into cold water. Cook over low heat, stirring frequently, until thickened and smooth. Stir in remaining ingredients. Pour into a baking dish and bake at 350° F for 46 - 60 minutes. Serves 4. Variations: Add 1/4 cup chopped nuts and 1 small apple, shredded; or add 1/4 cup unsweetened, flaked coconut Calories per 1 cup serving: 141.
