Guest guest Posted November 4, 2001 Report Share Posted November 4, 2001 French Toast Source: NEWSTART Lifestyle Cookbook (adapted) 1 cup water 5 pitted dates 2 Tbsp. clean, raw cashews or sunflower seeds 1/2 cup orange juice 1 Tbsp. flour (choice of gluten free) 1 dozen slices of gluten free bread Using a blender, process dates and cashews in about half of the water until very smooth. Add juice, gluten free flour, and remaining water and continue blending until smooth. Pour into a shallow bowl. Dip bread slices into batter and place on a sprayed cookie sheet. Bake at 400° F until golden brown. Turn and brown other side. May also be browned in a skillet. Top with applesauce, fresh fruit, or truit topping, if desired. For variation, blend in a banana.
