Apple and Spice Muffins

Source: Allergy Cooking with Ease

 

1 3/4 cups quinoa flour

1/4 cup tapioca flour

2 tsp. baking soda

1/2 tsp. unbuffered Vitamin C crystals (or lemon juice)

2 tsp. cinnamon

1 1/2 cups peeled and chopped apples

1 cup unsweetened applesauce

1/4 cup apple juice concentrate, thawed

1/4 cup oil

 

Mix the dry ingredients together and stir the chopped apples into them. Mix

together the applesauce, apple juice, and oil, and add them to the dry

ingredients, stirring until just mixed. Put the batter into an oiled and

floured muffin tin, filling the muffin cups about 3/4 full. Bake at 375° for 20

- 25 minutes. Makes about 16 muffins.
