Rice Papers/Spring Rolls

Hi all!

 

I had to share with you a cooking adventure! Lauren (on this list) recommended

making spring rolls from a variety of vegetables. She takes rice paper and uses

it to roll up the vegies and then fries them.

 

I tried this and they were a success! Everyone loved the flavor and even my son

who dislikes vegetables ate them! I had a bit of trouble when soaking the rice

paper, though. I soaked the entire stack at once and saw I was going to have a

gummy mess. . .so quickly took them out and tried to " pry " them apart. Lauren,

do you soak only one at a time?

 

I didn't fry mine, but used a non-stick pan and PAM. It worked well. One of my

dear friends from Thailand makes spring rolls in rice paper and they eat them

without any cooking at all (probably steaming the vegies first, before adding

them to the wrap).

Hi LaDonna!

 

Yes, I do them one-at-a-time. It takes forever! So I put out eight plates of

water on one counter so I can do eight at once! LOL!!

 

I'm glad you enjoyed them. They've become a staple in our house!
