Guest guest Posted October 30, 2001 Report Share Posted October 30, 2001 SPICY BANANA MUFFINS wheat-free, dairy-free, gluten-free GF 1 cup brown rice flour 1/3 cup soya flour 2 tsp baking powder 1/2 tsp mixed spice 1/2 tsp ground cinnamon 1 cup unprocessed rice bran 1/3 cup brown sugar 1 cup mashed banana 1/2 cup sultanas 1 cup soy milk 1/2 cup chopped dried apricots 2 ozs dairy-free melted margarine Prepare oven to 420F, prepare pans. Sift flours, b/pdr and spices into bowl, add remaining ingredients; stir until just combined. Spoon into pans and bake for about 35 mins or until cooked. Dust with sifted icing sugar if desired.
