Guest guest Posted October 29, 2001 Report Share Posted October 29, 2001 Tomato Hummus with Tahini Source: Bonni at SDA-Vegan-Cooking 1/2 pound dried chick peas 1/2 cup lemon juice 1 tablespoon fresh, minced garlic 1 cup extra-virgin olive oil 1/4 cup tahini 4 ounces tomato paste 1/4 cup fresh parsley, chopped, for garnish Black olives for garnish Sprinkle of cayenne for garnish Soak the peas overnight and then drain. Boil the peas in a large saucepan with plenty of water for 3 hours. Drain and allow to cool. Use a blender and puree the peas. Add the lemon juice, garlic and olive oil until a fine paste develops. (You may have to add a little water to the peas to lubricate them.) This is the basic recipe for hummus. To flavor the hummus, add the tomato paste and tahini and continue to blend. Salt to taste after refrigeration.
